Put scaffolding into your inventory
Place a block at eye level
Transfer your scaffolding to the off-hand.
Place another block looking at the side of the block, aimed in the centre.
Block will not stack on top, but placed behind instead.
This might be intended but I can't see any utility for it.

This might not always be the desired behavior. In same cases you might want to interact through the scaffolding with the item in your mainhand, e.g. your sword.
The full hitbox is only active when scaffolding is in the main hand, to make it easier to aim at the surface you want to place the scaffolding on. All other blocks and items will use the form fitting hitbox.
You are describing the current behavior, right? Since your report says holding scaffolding in the offhand should also show the full block hitbox to make it easier to place it, the question is when this should be the case:
Only when the mainhand is empty
Only when the mainhand contains a non-block item
Only when the mainhand item is part of a certain group (e.g. food?)
For both behaviors, showing the full block hitbox and only showing the thin hitbox, there are valid use cases which require either of them.
Yep, that's the current behaviour. What I'm suggesting is whenever a right click (default controls) would place scaffolding, it uses the full block hitbox, i.e. when the off-hand has scaffolding and the main hand has either nothing, or an item that doesn't have a right click function.
I can't think of any reason you'd want to use the old hitbox when placing scaffolding, as the new placing functionality covers any uses it would've had. But there may be ones I haven't thought of.
