I keep throwing bread to different villagers. I built a large house with 4 beds in it (2 bunk beds now, they were separated before). There are 5 villagers, 2 of them working too far from gathering point, each one with their home and 2 extra beds aside of the 4 new beds I installed in the house I built.
They show hearts when at gathering point, many, many hearts, but then they always end up getting angry and not breeding. There's nothing obstructing the beds (a villager walked in and slept in one of the beds). I keep throwing them bread, they keep trying to mate, but always end up getting angry and just walking off.

There are 5 villagers
But I assume you mean you build an extra house and you do have enough beds. Make sure the villagers are not to far apart from each other, one way to test that would be to ring a bell and see if ALL of them move, otherwise your villagers might have created multiple villages.

@Luis: I may have found a workaround... I was going to an old village to check if I have the same behavior, and it was exactly the same, except in one small room with 2 villagers and 2 beds. I added 1 bed, dropped 12 carrots to each villager, they started to mate and... bim, a new baby villager ! The only difference was the heigh of the room: it was the only room with 3 vertical blocks of free space (all other rooms only have 2 blocks height).
So I go back to my new village, push up the roof 1 block, give foods... and bim, a new baby ! Can you check on your side if you have same behavior ?
@Lofwyr Sadly, that isn't causing my problem. I always build leaving 3 blocks of height for insides, because when I build something with 2 blocks of height, I feel confined. Sucks being claustrophobic. I honestly don't know what makes them fail when mating. They have perfect roads, nobody dies inside due to the high lighting and security there is (A wall surrounding the village and impeding every mob to get in and three Iron Golems) and the high quantity of beds. There are 7 villagers now, I cured 3 zombie villagers (When you cure a zombie villager, that villager will give you a massive discount! That saved me soo many time of mining chunks of stone to find 3 diamonds, as I got a full-diamond enchanted armor for barely 2 emeralds each piece, and its original cost was over 20-32 per piece) and guess what! They found and claimed the beds from the building I built, so that means there were accessible beds. All requirements are fulfilled, so I no longer know why they won't stop failing when breeding.
P.D: And the staff seems like won't be replying until next month or so.

I did some testes and I can confirm that if beds are stacked on top of each-other (bunk bed configuration) the villagers do not detect the free beds to have a successful breed. Despite the fact that they can sleep in all of the beds.
I tried with 2 villager and 4 beds in bunk(2x2), one time stacked directly on top of each-other, and once with 1 free block between the beds.
The control with beds not stacked worked fine.
