I created a new ticket for the right-clicking issue: MC-266114.
In case any further clarification is necessary, pressing a number key while hovering over an input slot in the crafter will do the following:
If the slot is disabled, it will be enabled and any item stack in the corresponding hotbar slot will be moved to it
If the slot is enabled and has an item stack in it, the stack will be moved to the corresponding hotbar slot
If the slot is enabled and empty, it will be disabled
Some of these actions result in the slot being toggled even though no items are moved. I'm not sure if this is intentional; the 23w42a changelog says "the player can change the behavior of a slot by clicking or pressing on a slot with an empty hand" (emphasis mine), but it's not clear to me that the latter is a reference to the number keys. This behavior also makes the interaction with MC-118107 a bit noisier, which I demonstrate in the attached video. (All I'm doing here is pressing 3 and moving the mouse, except for when I temporarily moved the copper to slot 1 and back.)
