The mushrooms on top of the red and brown mooshroom cows cannot be independently retextured from their respective block textures.
Steps to Reproduce:
Download and apply the following resource pack:
Spawn a red or brown mooshroom cow
Observed Behavior:
Despite the player only choosing to modify the red and brown mushroom block textures, the mooshroom entity will have changes made to it's texture.
Expected Result:
Only the block textures would be changed, as that is all the player intended to alter. Having the entity's texture be modified due to a change made to a block's texture could be unexpected to some players, and not resource pack friendly.

Should an enderman's block, an iron golem's flower, a player's pumpkin head, or a minecart's block be independently texturable? Mooshrooms include the mushroom block models as part of a feature renderer, so they aren't part of the entity model itself.

Can confirm.
[media]That's definitely fair @unknown, just with the recent triage of other similar issues I decided to report this and see what Mojang thinks. If it's invalid or a feature request that's fine, and if not, the other behavior you've pointed out could also possibly be reported.

This one is also special because I would tend to intend to edit both, and if I don't I suspect there would be some blockstate solution
