Entities touching the cauldron from below can get burnt even if they’re not colliding with the lava part of it, it would be expected that entities only get burnt if they are touching the actual lava part of the cauldron (2/16th from the side, and 4/16th of a block from below).
Can replicate by placing an armor stand in 3 layers of snow (should be standing at y=*.25) and pushing a lava cauldron from above with a piston, or even by just jumping into a lava cauldron from below, or flying into it from below in creative.
The bug is especially annoying for lava chicken farms, since eggs being dispensed can push baby chickens up into the cauldron from below, burning them due to this bug.

While yes there was a behavior change to chickens, which now jump from thrown eggs and get burnt (and i don’t know if it’s intended behavior or working as intended), i believe that it shouldn’t be possible to get burnt from jumping under a lava cauldron since you should hit your head with the underside of it before touching the lava. If this gets fixed then the other bug regarding baby chickens won’t matter; the farm will work regardless even if they jump.
This issue is being tracked in MC-297593, and the fix will be shipped in the next development version.

That would explain why baby chickens got burnt, because they jumped.
