If a player has an odd number of absorption points, the last heart on the health bar will turn yellow and you'll appear to lose an absorption heart.
I encountered this bug first on a custom server, then also reproduced it in vanilla single-player.
Example steps:
Apply /effect @p absorption 600 5
/tp ~ ~10 ~ , or any other way to take some odd amount of damage
Notice your last heart turns yellow.

The JIRA ticket hasn't been updated since August 2021 and the latest version listed is 1.17.10.20 Beta. Resolving as Cannot Reproduce.
Can only confirm it on freshly created worlds where you never died before. Seems to be fixed after death
