Steps to reproduce:
Create a flat world and place some blocks (glass won't work) floating in the air;
Increase the RandomTickSpeed
Set time to midnight
Expected results:
Nothing happens at all.
Observed results:
The grass blocks below the floating blocks turn into dirt.

I also made a report 6 days ago about trees generate dirt underneath them. See MCPE-45751. I don't know if this is related to this. Also relates to MCPE-45698 and MCPE-45689.
This should've been confirmed or marked as Community Consensus already. This issue is really annoying.

Same from MCPE-46989, I am update road in 1.10+Daerah kepulauan desa maju in circle road, when planting a tree, we turn grass to dirt at night. You can duplicate for site to resolving the problem on next version or some next version.
NOT fixed in 1.12.0.10 beta. This issue got partially fixed, some blocks like scaffolding don't have this effect anymore. However, floating blocks still turn grass into dirt at night time.
Can you please be more specific? Do you mean opaque blocks above the ground? Can you give some examples?
Edit - apologies the fix wasn't quite ready for this latest beta it seems.
Fixed in 1.12.0.11 beta. However, another one got introduced and I think it's related, but thankfully it's nowhere as bad as this one -> MCPE-47309.
Here is why Because the block above the grass is blocking the rain and sun from hitting the block
