When using a surround sound setup, all sounds except UI are localized in 3D. This works well for most sounds, but for sounds generated by the player – footsteps and chewing, for example – having the sounds seem to come from outside yourself is inaccurate and distracting. It doesn't help that these sounds are the most common thing you hear in the game.
Try it with a surround headset: Running around, you'll hear your footsteps coming from behind you, as if you're constantly being followed. Worse, if you strafe left or right while running, the footsteps become further detached. Worse yet is the sound of eating; this literally happens inside your character's head, but is nevertheless affected by your motion. Running while eating makes the chewing sounds move in the opposite direction, as if your jaw is not firmly attached to your own head.
This issue is NOT related to reported issues of sound missing from certain channels or being too widely spaced; This is only regarding sounds which should be forced to always play in the center channel only regardless of the player's motion, like the UI sounds already do.

When eating or walking, the sounds seem to switch rapidly between the left and right channels and is VERY ANNOYING.
The 1.16.0.63 changelog includes this line:
Fixed issue where sounds would sometimes have incorrect settings applied to them leading to 2D sounds to play as 3D and vice versa
That sounds like it could be relevant to this report, though I don't know if it was intended as a fix to this issue. Can someone retest in the current beta?
