Updated description by GoldenHelmet:
Expected result:
If you exit Minecraft while riding an entity, you would still be riding that entity when you reload the world. If Minecraft closes without the using the "save & quit" option to exit the world first, the auto-save function would preserve the entity you are riding.
Observed result:
If you are riding an entity and exit Minecraft without using the "save & quit" function–whether intentionally or due to a crash, OS event, or network event beyond your control–the entity you were riding will often be gone when you reopen the world.
Steps to reproduce:
Ride an entity.
Wait long enough for an auto-save to occur. (30 seconds seems to be enough.)
Travel some distance after the last auto-save. In the attached test world,
, travel from one end of the track (in minecart) or canal (in boat), or about twice as far on the horse if it is a fast one.
Close Minecraft without using the “save & quit” function. (I used Alt-F4 in Windows 10.)
Reload Minecraft and reopen the world.
Original description:
When you save and quit while on a horse, when you log back in, the horse is gone.

I have reproduced this bug in the attached test world riding a horse, minecart, and boat:
and updated the description and confirmation status accordingly. A couple of notes:
While testing with a boat in an infinite non-flat world I occasionally found the boat back at the location of the last “save & quit,” but most times it was just gone.
Examining the world save in MCCToolchest revealed that before reopening a world in which the ride would be missing, the NBT data of the player showed a RideID, but the entity that was ridden did not exist in the world save. This shows that the bug is occurring with the save process, which fits what was found in the Java instance of this bug I linked in my previous comment.
Evidently there was an earlier attempt to fix this issue with MCPE-17788. Either that fix was not complete or it was undone at some point.
When I changed my status into Spectator mode, I could find my boat.
Here is a video of this bug, and my corrupted world would be helpful to solve this.
It took a long time because I was inexperienced at operating the built-in Windows recording device. Please excuse me. Since both the original world and the world used in the video have been posted, please use them for bug fixes.

Please note that this is not the same as Working as Intended, as this bug report correctly describes behavior in the game that might not be the intended or desirable behavior, but it will not be fixed right now. Sometimes, this is because the issue reported is minor and/or impossible to change without large architectural changes to the code base.

The same bug occurred in Java Edition and was fixed some time ago. See MC-47508 and especially the code analysis in this comment.
