Currently in my world, all mobs have stopped naturally spawning despite being on normal difficulty. Friendly mobs don't spawn during the day. Hostile mobs don't spawn at night. Mob spawners are the only way to generate mobs. I closed the world and opened it and that fixed the issue once but it hasn't worked since that one time. I tried copying the world and faced the same issue. I'd prefer to keep the current world so that friends who join the world will retain their items.

I should also add that breeding mobs does still work as intended.

I have also noticed this happen to me today as well. Went to the nether and nothing hostile was spawning for very long even in a fortress. Then eventually I got to a blaze spawner and eventually things started spawning. Got back to the overworld and have gone through two nights with nothing spawning. Went to my spawners there which still worked, but would not trigger any other regular spawns. *Edit* on Windows 10.

Tried again today. Switched to Hard mode and I could get mobs to spawn, but switched back to normal and they stop spawning.

Spawn ranges have been expand for simulation distances 6 and up in 1.16.100. Has that improved your experience?
There is also a global cap of 200 mobs that will cause environmental spawns, but not spawners or breeding, to stop. Sometimes players exceed that by accident with automatic chicken hatchers. Would that explain
your situation?
