I was playing multiplayer, and one of the players got kicked out of the game, in the overworld, due to a connection issues. When she got back, she'd lost her Shulker box, that was placed on the ground next to our build site.
I was still in the nether when it happened. When I arrived, we tried looking for the box with no success. We even dug the ground around where the box was sitting, just in case it went through the block under it.
Started as soon as I updated to 1.21.121

I had the same thing happen to me. What helped me was turning off the “Improved Input Response” toggle under the Video settings. Hope they fix it.

I re installed everything because I did not see this first. It took me a whole day because the interface was extremely lagging.

Same here on Win 10 Pro.
1.21.120 is unplayable. It runs almost like a slideshow and eats up all RAM.
It used to run smooth on 50 chunks render distance.
I tried turning off dithering but that did not help.
Mine lags so much is unplayable as well. I setting to Fancy, and tried turning off dithering and dropping render distance, but it did not help any.
