It appears this bug was unintentionally fixed in recent updates, as this bug was present at the time of publishing this report, and I didn't have any active resource packs. Please keep this report as resolved.
This is a video that also shows the error.
I no longer have the bug with the copper golem's eyes so I'm fine with this report only focusing on the iron golem because the iron golem bug is still present.
