I've seen this happen a number of times.  Most frequently it has happened in the Nether, and I will see XP fall from the sky as I load the chunks in, as if I had just taken out a Ghast.  On several occasions it seemed like I would get the XP showing up in the same spot every time I would go into the area.

I most recently had it happen in the End.  After summoning and defeating the dragon, I gathered all the XP (which included several of those annoying ones that follow you around forever - but I did eventually get them), and then took the gateway to the outer islands.  When I came back to the main island (through the gateway), there were several new XP orbs laying around that were not there when I left.  I haven't been back yet, so I don't know if they will reappear or not.

I've been seeing tridents turn into fishing rods for 20%-ish (rough estimate/guess) of trident-wielding Drowned in 1.16.1/1.16.10.  I had never seen it prior to 1.16, and now it happens quite often.

Nothing complicated to reproduce - just go to an ocean and use a sword to attack Drowned carrying tridents until it happens.

I have had the game crash multiple times when someone is standing on the shulker box as it is opened.

Experiencing the same on Win 10.  No difference if the ore was first collected with silk touch or mined in place.

This has been extremely frequent with sugar cane.  A newly-grown 3rd segment will appear floating above the bottom segment.  The middle piece cannot be broken while invisible.

I've only noticed this on sugar cane grown below the surface with blocks overhead, but I haven't yet specifically compared it against a large patch grown outdoors.

I've found this pretty often while mining.  I've only ever noticed it because I take suffocation damage when walking into that space.

Haven't experienced this with a PS4 controller, but it did start happening when I switched to an Xbox controller.

I noticed slightly lower performance / intermittent lag on an iPad mini 4 directly after updating to 1.13.

I've been having this issue on iOS as well. It happens frequently, but not 100% of the time.  It kind of feels like distance may have something to do with it, but I'm not totally sure.  I've killed them from quite far away without crashing, but it seems like every time it's been some "medium" distance (sorry for the vagueness) the game will crash.  Shot one last night and crashed.  After reopening, surprisingly both the Pillager and I were in the same spot as when it crashed.  I moved a block or two (don't remember if it was closer to or further away) and shot, fully expecting a game crash (even started a screen recording), but there was no crash and the kill was successful.

This is happening to me as well on iOS.  Bucket will empty and revert to its original place when moving from hotbar to inventory.  Dropping the filled bucket and picking it back up once your hotbar is full will get it into your inventory successfully.

This happens to me fairly frequently on iOS when the game crashes.  Doesn't matter if it is leashed, named, saddled, or armored.

Seeing the exact same thing on iOS with no add-ons.
