I've been seeing this same issue. For me, it started with 19w12a. I haven't spent more than a game day in any of the villages but this is how they behave.
I just noticed that when I save, quit and reload, they have professions and start to do things again.
Everything else in my game seems normal.
(I didn't put it under MC-146184 because I'm not having any of the other issues)
That is sad... I can't get into friends worlds and they can't get into my world. We r both updated to current version.
I'm having same issue on my iOS also. Very annoying.
