This still exists in 1.16.201. The guardians won't fall below level 48 or 49. They just float in air as if they are swimming. I use magma blocks to kill them but they won't fall low enough to hit them. The only way to resolve is to move the magma blocks up.
I can confirm that this is happening in 1.16.1 - at least on Realms. After defeating the dragon, the portal appeared and it worked a few times. Then suddenly, while I was in the End, another player tried to use the end gateway and it teleported him to the exit portal. From then on, the portal was broken. We "fixed" it once by resetting to an earlier backup, but it's broken again.
Also not working: "Luck of the Sea III", "Luck o'the Sea III", "Luck/Sea III", "Luck", "Luc", "Luk"
I ultimately had to go with "LOTS III".
This is still an issue. I've had this issue with multiple text values. I'm not sure what the commonality is. I'm currently making a trade hall and signs to indicate what enchantment each villager sells. The values that have caused me issues recently are: Sharpness V and Quick Charge III.
"Sharp V" worked, but "Sharpness V" did not.
"Quik Charge III" worked, but "Quick Charge III" and "Quick Chg III" did not.
Both signs were using the "§f" formatting codes. Not sure whether that makes a difference or not.
Using version 1.16.0 on Realms.

Faithful texture pack worked last night. Received 1.12.1 hot fix today. Texture pack is ignored. Nothing loads. Playing on Windows 10. Haven't tried Xbox yet. Tried a few other packs. Nothing loads. Game works but uses default textures.
Just ran into the same issue on Realms. Although with Realms, you can't just restart the world. I had to download the world to my PC and then reupload it - which forced a restart. I'm guessing I could probably have restored a backup as well but I would have lost some changes if I had done that.

If you have Realms+ (10-player subscription), something else you might want to try is activating a different slot temporarily, then reactivating the original. You probably wouldn't even have to open the second world for this to work.
