I suspect this is intentional because desert wells are not considered "proper" structures: they do not have a /locate command so the game does not use structure code but just natural/world terrain generation. In other words, they're part of the natural world.
The arrow traps work for me but the lever puzzle does not.
Seems to also affect other mobs, tried with zombie.
Just confirmed in 1.16 pre-2 that minecarts do not cause this issue.
Does this also apply to minecarts?

This is from a world I had already played, after returning to it. So the issue presents again even after resetting world. It does not occur right away (I can place blocks without issue, break blocks without issue).
Upon entering the water though, after successfully destroying a seagrass block, I was unable to mine a moss stone block (animation appeared but no progress indicator and block not destroyed after several seconds). Afterwards I could not mine any blocks at all - no animations - could not eat, hit mobs, break or use boats, etc.
As well, all naturally-spawned Drowned from the ocean ruin in this seed vanished upon second reload of world (second play after initial world creation). This also occurred in version 20w21 and 20w22. (I suspect it occurs in any 1.16 snapshots past the one in which ocean ruin/shipwreck spawning was changed).
EDIT: I had forgotten to mention this in original post, the particular glitch with all Drowned naturally spawned in from ocean ruins despawning after saving and quitting to menu occurred in 20w21. Note that I had saved, quit, and reopened the world many times until I noticed this. This is the only glitch in 20w21, none of the other ones occur.

Using either scrollpad or touchscreen does not fix the issue, the game simply seems to stop recognizing certain actions (even though it still processes clicks, because I can still break blocks).
I forgot to try quitting to menu and restarting the world in each version to see if the issue disappears for a while like it did the first time(s) I encountered it. Please let me know if I should try this again.

Second play had multiple issues including unable to hit mobs, unable to place blocks, unable to eat food items in inventory, unable to use or destroy boat, unable to open chest. This does not show in the logs. Possibly a personal hardware issue? I am using a mouse and will try using touchscreen or rollerpad/mousepad as well in next version.
