I have not found the issue since. I tested a few days ago (v 1.17.10) with care and did not see the issue reoccur

I found this issue to occur on xbox also. In chunks loaded during the 1.16 update, I found no bee nests in the areas I explored, having been plains, sunflower plains, forests, and flower forests. After the 1.17 update, I found 1 bee nest about 1800 blocks from spawn [seed: -1828146135]

There was a recent fix where the bee hives/nests had their placement orientation fixed, which means that the new correct orientation of the block is facing a tree. If this happens, the bees won't come out. The entrance must have connection to open air for them to leave the nest. I had the same problem, but once I rotated the nests, the bees started coming out

Same here as well.  Unable to install at all.
