I am also experiencing this on a multiplayer world on Xbox One (not a realm). The game didn't crash, but periodically we notice some chunks have reverted to an earlier save. Not fully reset and made empty, but reverted to the way they used to be (such as an earlier build we had there).
This is happening to me as well. The world is on iPad, and I am trying to join via Xbox account invite. The problem is the same with trying to join from either Win10 or Xbox.
I can confirm that my above theory was correct. Each villager has a hidden ID that determines leader and claim order. If the next in line is gone (dead or not in a loaded chunk), the village gets stuck. Destroying all of the beds and then re-placing them resets the villager IDs and resolves the issue.
The leader also changes very frequently when you breed new villagers, and sometimes when you place profession blocks. Sometimes I have even ended up with three leaders (they get green sparkles when I place a bell).

Theory: The next villager in line to claim a profession is dead (edit: or out of range). It should be jumping to the next, but it's stuck.
Background information: I have noticed that villagers claim job blocks in order, not proximity. So if you place a job block, a certain villager will claim it. If you break it and place any job block anywhere in range, the same villager will claim it every time. The range is quite large, close to 50 blocks. They do not need to be able to reach or even see the block to claim it.
My Issue: I placed several job blocks in my trading hall to see who claimed them, then broke and moved them next to the that villager, no problem. The last two job blocks, however, aren't being claimed. I have several unemployed villagers and no nitwits. There is a raid happening outside, but all of the other blocks were claimed during the raid just fine, and nothing has changed.
Client info: Game version 1.14.0. Device iPad Air 2, iOS v13.2.3. The world is a Realm.

Please reopen this issue. It being difficult to reproduce does not make it somehow imaginary. It affects 1.4.2.

Also affects seed 7032009. Head east (toward sunrise) a little bit, then start throwing eyes. They will lead you farther eastward, far, far, far away to a desert village. There is no stronghold and no portal under the village. I searched right where the eyes were dropping clear down to bedrock. Affects 1.0.1 on iOS.

The files named Fantasy, Natural, and Plastic are all much darker in color than the default texture, the file named Vanilla.
After creating this issue, I found a nether fortress and noticed that it, too, is extremely dark (IMG_0118) compared to the vanilla nether brick texture (not pictured at this point).
This is not a duplicate of 14432. It doesn't even relate to it.
Added Nether Brick texture from Fantasy pack. It is even darker and basically black. Even darker than the old (now fixed) vanilla texture.
I know, and that's why I included the vanilla texture for comparison. I'd rather not raise brightness because for one, it washes out everything, causes eye strain and wastes battery, but more importantly, the game should play perfectly fine with the device set to Apple's default (which is the automatic setting) and game brightness at default (50 percent).
Not exactly. The original save the screenshots are from is lost. Last night it happened in another world, but my son mined the extra portal and it did not regenerate. I will upload it anyway, however. If QA makes a new world with the same seed and duplicates the conditions, including building what my son built on the nether side (doing this and traveling back to the overworld is what triggers the portal duplication), it should reproduce.

Note this world has been synced back and forth between two Xboxes at different homes. It may be related.
