Having the same issue.

Using the same Gnembon design as Connor (https://www.youtube.com/watch?v=ckhe8ws-a4w), I have noticed that endermen are also teleporting to the leaf blocks used to go out to the void.

I have a 1080 and 7700k, and my guardian farm lags on me too. Mine is much bigger than yours, but all the same... The fact of the matter is that the issue lies in your hardware, not so much in the game. There might be ways to optimize it, but outside of turning your particles down (which is in the game so that your hardware doesn't need to work so hard) there isn't much you can do unless they optimize the particle effects.

 

This happens with Villagers too. Villagers will only plant when the player nudges them to the empty farmland, they will not path find to the farmland or crops on their own.
