As it turns out, when the particles are ticked it looks for any player entity in close proximity and immediately changes its Y-velocity.

Also can be recreated with wet sponges in the Nether.

This may be a problem with your headphones, I'd suggest to disconnect and reconnect them. (For reference I was having the same problem, turned out to be a mistake on my end) 😉. Also if you could, attach a video so it's easier to reproduce. 😛

This is the case for Bedrock too, but just with the stripped spruce texture. Java, in my opinion, has the correct texture that actually matches the corresponding plank.
