Pumpkin and melon stems use wood sounds for breaking, unlike other crops

All other farmland crops use the sound event minecraft:block.crop.break. However, pumpkin and melon stems and their attached variants still use the wood sound for some reason, which is likely incorrect as they use the correct placement sound.

This was somewhat mentioned in MC-91091, however the specifics have changed since and material from that ticket is seemingly generally agreed to be reported separately.
