The minecraft launcher starts updating as soon as i launch it. The bar moves a bit and halfway through , there's an error message saying : "unable to update the minecraft native launcher"

Please start that support ticket with the following text: "Reporting from unable to update Minecraft Native Launcher bug to provide the information". This is so that our support team can find you easily and forward that to us.
Then include screenshots of the launcher, the launcher text log, your Xbox Gamertag, and information on how you own Minecraft Java and/or Bedrock. Was it a direct purchase on minecraft.net or by game pass?

Have you tried to uninstall and reinstall the Launcher from the Store? It might solve your problem.

I have tried installing both launchers from the Microsoft store and the minecraft website. Both give me the same error, ive fully uninstalled both before installing the other.
The only work around ive found is installing the old windows7/8 installer (i am on windows 10). It will get past the "unable to update minecraft native launcher" error. however, it did take me a few installs on the 7/8 version to get it to work. But this is not a solution.

Could you try to reinstall the Launcher? After deleting it, find .minecraft and delete the file - what is important that this file should be deleted from the trash bin, because corrupted files from the old .minecraft file may interract with the newly generated .minecraft file.
Does this issue occur on minecraft.net website/MS store version of the Launcher?
Are you logged in in both Xbox app, MS store, and Launcher with the same MS account?
Have you tried signing out of all your Windows Apps, and the signing in again?
Is your Windows and associated apps (Xbox app, MS store) up-to-date?

Have you tried downloading 'Xbox Identity Provider' found here https://www.microsoft.com/en-us/p/xbox-identity-provider/9wzdncrd1hkw#activetab=pivot:overviewtab (or in MS store)?
