For some reason, (this does not affect versions below 1.19.40), whenever you open the inventory and a good number of things can be crafted, it causes a significant performance decrease when hovering over them (for example, from 60fps to 45fps, or in some cases even lower than that). For the most performance impact, repeatedly move the cursor around the items which currently cannot be crafted.
A workaround to this performance bug is to close the recipe book, which appears to be the cause of the performance decrease.

I have this same issue!

Added an additional clip to this issue. It's pretty bad on my Xbox One despite a brand new world.

This is also happening on my Nintendo Switch as well as my PC. There is a noticeable lag in the entire gameplay, but the inventory and crafting menus are by far the worst.

Having this issue on my Switch also after updating to 1.19.40. Also I often use the touch screen for crafting. Since updating after crafting one item I cannot then select a different item to craft after. I have to close and reopen the crafting interface to select the next recipe.

I can confirm that this bug is on Windows as well as PS4. Also, the lag does not occur if you are in a chest, barrel, shulker box, etc. so that can be an inconvenient workaround until this is fixed.

How long does it usually take for these things to be fixed?

Seriously, when this kind of things happen they should go back to the previous version so people can keep playing and upgrade to the new version when they fix it...

I'm. Playing on the switch and the inventory is just ridiculously slow to navigate. its hard to get anything done at speed.

I may have found a temporary fix to this issue. In my experience, I've found that closing the recipe book increases game performance. I can't promise this'll work for everyone, but it's worth a try at the very least.
To close the recipe book, open the inventory menu and hit the button in the top-right of a single chest. (ZR is a button shortcut, but I've edited my button inputs from the default so results may vary if doing it that way.)
I made a short 20-second clip of the game's performance. In the video, I put on a full pair of armor, moved a chest from my inventory to the hotbar, and then removed all the armor. With the recipe book open this took 13 seconds and with it closed it only took 7 seconds.

This bug is fixed in the latest preview version, and the fix will be included in a future update when that is ready for full release (no specific date can be given). We will leave this ticket open as a point of reference until the fix has been fully released.

Sorry, but this problem is not fixed on Nintendo Switch. When you move the cursor when crafting it doesn´t move smoothly as used to be, it´s so fucking uncomfortable to play this videogame after the 1.19.40 update. I'm selling this game because it's unplayable for months... I will try another survival game. Thanks for nothing Mojang and developers.

It's fixed for a future update not the current update

It says: "Fix versions: 1.19.50.25 Preview, 1.19.50" and the game is in the 1.19.50 version right now. Now when you are moving the cursor on the left panel is okey, but the right one is a pain in the ass.

Can confirm that moving around in the crafting recipe book is now back to normal, but moving around in your inventory is still jerky and laggy. This is only partially resolved.

XBox version became almost unplayable, especially when playing split-screeen. Wonder why it marked as resolved...

I've noticed beds in your inventory also drastically affects performance while in the inventory (Xbox one S, latest version)

I still have this issue in v1.19.51 (Nintendo Switch). It affects split screen play: while one player uses inventory, another player has huge lags.

Upon the release of version 1.20 on Nintendo Switch Edition, this problem appears to be back. One of the 1.19 hotfixes (1.19.83 if I remember correctly) had fixed it for a while but as soon as I began playing in 1.20, I noticed the game become very choppy and laggy while interacting with the player’s inventory.

This is STILL not properly resolved as of Xbox Bedrock version 1.20.15. To replicate, open the crafting table and craft an item, then use the X or A button to pick it up from the crafting slot. There is a noticeable almost 1 second lag. This makes the game unplayable in certain scenarios.

STILL not resolved in 1.20.41 - and has got worse since recipe suggesting was introduced.
