This is still a problem in 1.21.110.24, as the order for waxed chiseled copper is still incorrect. The weathered and oxidized variants are swapped:

I have no resource packs enabled. I checked the iOS preview and this bug seems to be a Windows only issue.
Only default vibrant visuals is enabled. I have no addons in the world.
