I didn't have an old world, but my world was created in 1.17 and I experienced this issue as well.
I build something in the sky years ago. Just recently I came back to continue building there and for fun decided to dig straight down to see what was below me. I was confused to find bedrock at 0 and then investigated further. Somewhere between updates 1.18 and 1.21, the bottom of my world didn't generate so there's a huge void hole there.
I've been following this bug for some time, and a recent email about a new comment reminded me that I found a solution, so I figured I'd post it here in case it helps others.
I was experiencing this bug since 1.20 (Trails and Tales), but ever since I bought a Realms subscription this issue disappeared completely. Realms offer a lot of benefits (like automatic world back-ups and letting friends or family play while you can't), but as this is a paid solution, I understand it's not for everybody.
I had this problem on Nintendo Switch. Going through a portal (Nether specifically) was just asking to die while the world was loading unless you set it to peaceful beforehand or did intense spawn-proofing.
I recently bought a realm and uploaded my world. Load times suddenly had Efficiency 5 levels of speed and seemingly fixed this problem for me.
I just wish there was a better solution that didn't involve changing difficulty or needing a paid service. The casual player may not know what a realms subscription is or afford one (or convince their parents to buy one).
Came across this issue in 1.20 yesterday on the Switch.
This issue seems like it would be relatively easy to fix. In the meantime, players can use a stonecutter to get their quartz bricks.
I've only used 8 trims total in my world (2 sets of mixed trim armor) and triggered the achievement. [Nintendo Switch]
The 8 I used were: Spire, Tide, Eye, Rib, Raiser, Silence, Snout, and Wayfinder.
A simple fix for this bug would be to update the description.
This issue seems pretty close to what I'm experiencing so I'll provide some additional details that I noticed.
I play on the switch with some friends and family. My world was made in 1.17 and my sister made hers in 1.19. We'd frequently play together without problems. Ever since the recent 1.20 update, when we join each other, we can only play for a couple of minutes before the non-host player loses connection. (Also when joining the world, the non-host player sometimes has a wiped inventory, as if they're joining for the first time.)
Single-player in our older worlds works just fine.
Tonight we made a brand new world and everything worked perfectly fine and we had no connection issues.
The bug might be size related, like OP said, but it could also be related to something in the new update breaking or lagging older worlds. (Not sure what that might include though especially since it's a multiplayer only issue.)
I found out today that this issue is present in 1.19.81 on Nintendo Switch. Hope this gets fixed soon so no other horses have to suffer the same fate.
I'd also like overworld shulkers to be enemies in a cool sky build I'm working on, but they got stuck at 512 like others have said.
@zoelyt I had a similar issue with the GUI going off the screen in a different game. I'm not sure if this'll work for you like it did for me, but here's a potential quick fix that only takes a minute. If you go to the switch's home screen, enter system settings, scroll to TV resolution, and find the adjust screen size option, if you drop that down a few % it might fix part of the issue.
I may have found a temporary fix to this issue. In my experience, I've found that closing the recipe book increases game performance. I can't promise this'll work for everyone, but it's worth a try at the very least.
To close the recipe book, open the inventory menu and hit the button in the top-right of a single chest. (ZR is a button shortcut, but I've edited my button inputs from the default so results may vary if doing it that way.)
I made a short 20-second clip of the game's performance. In the video, I put on a full pair of armor, moved a chest from my inventory to the hotbar, and then removed all the armor. With the recipe book open this took 13 seconds and with it closed it only took 7 seconds.
[media]If my understanding of this issue is correctly, then yes. I am still experiencing this issue single player on Nintendo Switch. (Single player with no mods or texture packs.) It happened yesterday when riding my minecart across the world. (I hit an invisible wall in the first few seconds of the attached video.)
I've noticed that it tends to happen near water such as a river or ocean biomes. (Boating across an ocean triggers this pretty much every time.)

Nintendo Switch player here and this bug seems to be closest to what I'm experiencing so I'll post this here.
In my case, I'm able to enter the Nether just fine; however, when trying to leave the dimension the game will black screen and display the 'software was closed due to an error' message.
In some instances, the game will freeze instead and I'll have to go to the console's home screen and manually close the software. When that happens and I reload the world, I'll be at the overworld position of my nether coordinates and suffocate in a wall like other comments here have mentioned.
Yesterday, my buddy went to the Nether in my world. When he died, the game instantly crashed and kicked all 3 us. When playing solo, the game crashes when I leave using a portal. (This crash can be avoided in solo by saving next to the portal, closing the world, reloading the world, and jumping in the portal as quickly as possible.)
For additional information, my world has 2 distinct areas. The main area, which overworld and nether, were created in version 1.17. The new area was generated entirely in 1.19.
The crashing only happens when leaving the Nether in the main area. I didn't visit the Nether in 1.18 so I can't say when this issue started exactly, but I first experienced it playing in 1.19.20 when trying to create a tunnel linking the two parts of the world. This issue is still present in the newest 1.19.40 version.
This possibly affects the Nintendo Switch as well.
I'm not sure if it's a bug different to this one, or just because of the lowered frame rate of the inventory screen, but when using the inventory grid or a crafting table, there's a small delay between crafts whereas in 1.19.30 you could craft in quick succession.
This bug is present on v1.19.22 for the Nintendo Switch as well and very hazardous to smaller mobs (chickens, frogs, cats) being transported to the end dimension.
Happens on Nintendo Switch as well.
I had to question whether I even put Relic in the jukebox because it's so quiet.
