When holding/using a map in the Overworld, the FPS counter starts to drop significantly low, when not holding out the map, the FPS counter instantly jumps back up. This doesn't affect the Nether or the End in any way, only the Overworld is affected.
Update: Explorer Maps are also affected as well.

I am using an iPad and, although bad in previous versions, release 1.0 is slower and, for some reason, worse over open ocean. Exploring the world is now time consuming and removes some the pleasure of playing as you have to wait so long for things to render. If you do remove the map you can move along more quickly but the map then has gaps in it so you cannot win either way.
I have given up playing version 1.0.0 because my enjoyment comes from exploring the world. Exploring the ocean is so painful now i.e. Moving forward a chunk or two and then waiting for at least 10 secs for any more world to appear, that I spend more time waiting than exploring. It is not so bad on land.
1.1 is almost impossible to play when holding a map. The game is far slower anyway now and holding a map makes it impossible. There are huge areas that simply will not render. These are areas with large cave systems and therefore I find all terrain difficult to map now and not just ocean and Woodland. I used to be able to map at least 16-20 x 3 maps. Then I had to reduce that to 9, then 4 and now I simply cannot get 1 x 3 maps to completely render and hence map. The memory usage is now so bad that I have to wait an age for the game to load before the agonies of waiting for the world to render let alone map. I would advise any iPad users not to load 1.1 as they have also reduced the maximum render distance to 6 chunks to cater for the fact that the game is so, so slow.
While it is mostly stable I tried it today on a world that is from 1.1.4.1. The maps didn't cause any lag there till beta 1.2.0.2 will add screenshots showing fps on my Android phone.

So it looks like it could be a limitation to mobile devices (even to the higher-end ones).
Perhaps this can be labelled as "Won't Fix" if that seems to be the case.
This should be fixed in 1.2. Although there might still be some lag on certain devices (unavoidably), the lag shouldn't make the game unplayable.
