I'm pretty sure this happens to all toggleable buttons in the game since a few snapshots ago. But I'm not sure if it's intended.
Cannot confirm. All types of Dark Oak Signs have white/yellow text in the item icon. Do you have any resource packs enabled?

This could be intentional as this is the same behavior as chests, hoppers, droppers, etc. have
Why is this "confirmed"? They even said at Minecraft Live "you're actually going to pull a Redstone signal that's gonna tell you what is the last book that was interacted with." So this must be the intended behavior.
How would you even be able to get 1s for the last two on the list? Those would only occur for very large numbers, right (like over 30,000,000)?

This could also be fixed extending the texture horizontally. I've added an image of this.
Note that this also happens within the launcher's patch notes.
If this bug is to be fixed, then I feel it should only be changed for the English (US) language. Others, such as English (United Kingdom), should not be altered.
