Never saw this in 1.16.3 but can confirm it is happening on 1.16.5, macOS. There is nothing visually showing that player is still riding the horse - inventory shows as normal (rather than showing horse saddle/armor equipped) and player can move away from horse (horse does not follow player). If I walk too far from the horse after I "fall through it" the world completely glitches out and ceases to render. Any attempt to place blocks after rejoining (and falling through the horse) results in the block disappearing a split second after being placed, and then reappearing in my inventory after a short lag. Restarting Java server or Minecraft launcher didn't help, I only discovered by trial and error that unmounting horse via shift key would clear the issue.

Issue affecting 1.16.3 as well. Every single new village I come across in unexplored map areas triggers a plethora of these errors and ends up screwing up village generation. Instead of playing, I spend half an hour or more manually filling in missing grass/sand/gravel/water blocks under and around houses and other structures just to make the area look normal again.

Seems to be related to device age or processor. Refuses to load on an iPad mini or iPad Air 2, refuses to load on an iPhone 5, loads immediately on an iPhone 8. Same app, same network, frustrating as heck. Stuck at ~¾ loading. Never advances. Reinstalling does nothing, disabling WiFi does nothing.

This is happening on my iPad as well and has been doing this for weeks now. Tried adding program to my wife’s iPad, new install, never been used on that iPad before, no dice. If I open the app on my phone it loads very quickly. Same version of iOS, same user account, same home WiFi -it simply refuses to work on the iPad. Deleting app and data and installing fresh does nothing to fix this. It’s frankly a bit ridiculous that this bug has not been addressed - if the app won’t load at all on one specific supported device, this is a problem.

1.8.0, unable to connect. Tried to connect Minecraft Switch to game running on iOS - invitation successfully sent, but invited player unable to join. Same router, same room. Reversing things didn't help - Switch player could open world and search for friend, but could not send invite; no option to add friend to invite list after finding gamertag. When trying to connect directly, iOS Minecraft could not join - same error message.

We were BOTH able to join one of the default multiplayer servers - however we could not see or interact with each other. iOS player invisible to Switch player, Switch player invisible to iOS player, other 3rd party players (random people who had also signed on to server, not friends) were visible to both of us.
