Try changing the slab above the chicken to an iron trapdoor, that may help.
Maybe the mounting fails because of the recent hitbox size change (if you can consider it “recent”)

The Pick Block has 2 ways to pick a block, with NBT data and without NBT data. A middle click alone will pick without considering NBT data, so it won’t find the renamed dropper. You should try picking it with the NBT data! You can do that by holding down the control key (CTRL, often at the bottom left corner of your keyboard) and picking with it held down.

Can you provide more context? Have you tried different versions? It should work in the menus, maybe a Windows update broke it.
Have you tried it in different versions, and a different mouse? I personally think it’s your mouse’s sensor doing it.

I’m certain that this is a mouse issue rather than a bug in the game, because I’ve had this happen to me too a while back. I’d recommend you set the debounce time higher (2-4ms works fine), or getting a new mouse. Good luck!
