This bug also affects farmland
Minecraft puts a zero in front to show decimals. When you move from the middle of the white to the middle of the red, you go from one half to negative one half. That is why it may look like your x and z say -0, when they really say -0.5. x=0 is actually on the intersection between the 2 blocks.
I believe this is a duplicate of MC-250678. Both tickets describe a.hotbar slots being selected unexpectedly after holding the slot’s key bind, scrolling, then letting go.
Can confirm from a recent report of the issue in 26.2

I believe this may be a duplicate of MC-96365. This ticket also describes boats rotational momentum being paused when you exit, and resumed once you enter again.
This may be a duplicate of MC-233607 . This ticket describes how hostile mobs will still track invisible players. This may also apply to iron golems that are in a hostile state.
I tested this in a 26.2 vanilla creative world using an alt account. When the boat moves straight, the passengers head does not move. If the boat turns, the player's head seems to drift relative to the vehicle, but faces the same north, south, east, west, location. If the boat continues to turn past a certain point, the player's head will be forced to begin turning with the boat.

This may be a duplicate of MC-308361. Both tickets describe small (baby) sulfur cubes despawning when you move far away from their location, whereas large (adult) sulfur cubes do not.
I tested this in a 26.2 singleplayer world in both creative and survival mode on a vanilla installation. I was unable to reproduce this bug, and the sneak animation displayed correctly every time.
I believe this is an intended feature as transparent blocks and blocks with holes like glass or fence gates allow you to see otherwise invisible grid lines in chunk borders.

Press f3+g to turn on chunk borders
observe some blocks allow you to see grid lines that others block
