Confirmed/Reproduced for most of the things on the list in 20w27a.

Dead Bush
Mushrooms
Sweet Berry Bush
Melon Stem
Pumpkin Stem
Nether Wart
Saplings
This behavior has changed in 22w45a; now (most) blocks that require support are dropped when the shulker box is opened.
They're still affected if the shulker box is sideways, and they're not attached to it though (like in the screenshots).
This still remains an issue for saplings, levers, torches, buttons, crops, bushes, mushrooms, and seagrass; it's just that in 22w45a, it was indeed fixed for these blocks, but only if they were placed above or below shulker boxes.
In other words, shulker boxes placed horizontally can still be opened when blocked by these blocks. I've updated this ticket accordingly.
is this a new bug on the minecraft jira??
