The bug
Snow covered grass, podzol and mycelium blocks use a different dirt texture on the side than the "normal" variants of those blocks.
How to reproduce
Place a grass, podzol, or mycelium block
Put a snow layer on the grass/podzol/mycelium and look for the incorrect change of texture
→ ❌ In all cases, a few pixels of the dirt block also changed, and for mycelium, the grass part did as well

Ignoring the pink up the top which is indicating the difference between the snow and the grass part, the rest of the graphic should ideally be black, but the brown parts are the differences.
Well, it's a slightly changed texture and I think, it should be fixed. It's actually more an annoyance... but also annoyances are bugs.

I'd add two additional notes:
This also affects when mycelium spreads to dirt, though less noticeable as you wouldn't be looking at it much.
The green pixels at the border between the snow and dirt textures make it somewhat grass-specific, as the green element comes neither from the dirt, the snow, or the mycelium, but from grass.
This fix also wasn't what the title says that was wrong. It explicitly said that the snow sides didn't match the normal versions. It wasn't just about the dirt texture, it covers the grass and grass-like texture too.
It seems this was not fixed for the Mycelium block, however that is now tracked in MC-219843
Confirmed, as OP suggests, it is easier to see in-game.
