If you place a cauldron underwater you are able to fill it with lava I would suggest to make it so the cauldron is filled with water when placed underwater and is unable to be filled with lava.

What if Cauldrons have as well "waterlogged?"
Just like Campfire, if [waterlogged=true] exists, then the Cauldron with Lava will turn to Cauldron with stone or sth else. This is perhaps a way to solve…
I would suggest making the cauldrons waterloggable, but also making the top texture of water not render and modify the water hitbox to solve this problem.
Cauldrons are not waterloggable in both Java and Bedrock, because cauldrons can holds water itself, so it is a bit difficult to implement.
If you place lava cauldrons above the block that is above the cauldron before filling the cauldron with water, then the bug still exists.But I don't think this is likely to be fixed

It's not really fixed. The bug may still exist.
I'm not satisfied with the fixing.
The opposite is also possible with cauldron of water submerged in lava. Either this is intended, or this might be better as a feature suggestion.
