When dropping a minecart onto a campfire, it breaks, unlike in previous versions, where it stays intact. I used a hopper minecart for it, and have not tried any other kind of minecart.

I have tested it in both editions of Minecraft and in Java the baoat stays on the campfire. In Bedrock the boat starts taking damage so I THINK this may be a parity issue

Boats and minecarts do not break instantly on campfires. They take the same amount of time to break as they do in a fire block. I tested soul fire, soul campfires, and lava also and they break twice as fast in each. Minecarts do not have enough health for me to be able to time accurately, but since boats have 40 health ( MCPE-62683) you can time their destruction.
In fire: boats take 1s to break.
In campfire: boats take 1s to break.
In soul fire: boats take 0.5s to break.
In soul campfire: boats take 0.5s to break.
In lava: boats take 0.5s to break.
Set on fire by riding through fire on blue ice: boats do not break despite burning for a few seconds afterward.
These numbers are consistent with boats taking 2 damage/tick from fire and campfires and 4 damage/tick from soul fire, soul campfires and lava with no damage cooldown. The damage cooldown seems to work correctly for being on fire. Perhaps their damage cooldown is set for "fire" damage but not for "fire_tick" and "lava" damage?
Boats can take damage from camp fires just by touching the sides/bottoms of the camp fire. and due to the boat hitbox being too large (MCPE-159084) they can break from a pretty good distance away from the campfire.
Can confirm for 1.16.201, also affects boats.
