While testing for what entities could be kept in mine carts and boats I noticed that Endermen could teleport from either mode of transportation. Was this changed recently? I believe you can still trap them in Java edition.

Thanks for opening this for review! My sis was a bit upset when she couldn't capture an Endermen like they do on Hermitcraft. XD
I have also experienced this where endermen are able to teleport out of a boat.
I have also experienced magma cubes being able to get out of boats as well. The magma cube will be captured in the boat for a random amount of time before it is freed again.
How to trapped Enderman in a boat and minecart java parity, Affects 1.21.1 Hotfix.
Step to reproduce:
Spawn a Enderman.
Search a boat and minecart.
You can escape in a boat and minecart.
Observed result:
❌ In Enderman can escape in a boat and minecart.
Expected result:
In Enderman can't escape in a boat and minecart.
