When placing blocks while flying and while holding in the crouch key, the blocks will be placed slowly and then will be placed one on top of the other even while still moving in a horizontal direction.
Steps to Reproduce
Choose any type of block
Go into fly mode
Hold the crouch key and the jump key while still flying
Hold the right mouse button on a block and move in a horizontal direction

It seems that when you crouch while the game is attempting to place a block it'll break the "block chain" (a quirk where block placing is locked into a straight line after placing 2 blocks - MCPE-30610)
I have noticed this on Minecraft: Education Edition as well, but it just makes it faster to build when you fall so for the "Block Placing Without Crouching", it isn't a bug for me.
i don't know about flying but the swift sneak enchantment causes crazy block placement when you use it while building. Places blocks below blocks if you are bridging out, or above them if otherwise.
Blocks erroneously pillar vertically while walking backwards and placing with Swift Sneak III active.
Confirmed, affects 1.19.10, regardless of fly mode.
Steps to Reproduce
Equip Swift Sneak III Leggings of any type.
Select any full block.
Input command /gamemode s
Toggle/hold crouch button.
Walk backwards while holding the place block button.
You can also pillar blocks up through other blocks with swift sneak and crouching while moving horizontally, a vertical pillar can be piled up through other blocks with this.
Right click to place a block while moving on a snow layer will place the block in the wrong position too
