When powering a dispenser with glowstone on a player, it will add the glowstone to the inventory head slot. It does not show up in 3rd person at all.

No not only the player but also the mobs. I tried it out in my testing world and its working for the mobs.
Additional information:
If the player has already equipped a cap or helmet in the slot, the glowstone goes into inventory as expected.
Sometimes, the first time you try this after loading the world, the glowstone goes into inventory as expected.
When the glosstone goes into the helmet slot, the dispenser emits particles as if it failed. In this case, the glowstone does not appear on screen the way it does (and should) when dispensed into air.
As reported, glowstone in the helmet armor slot is not rendered to other players or visible in third person views.
It appears that Mojang has partially fixed this problem, which is why you aren't able to reproduce it any more. However, they have not internally marked it as fixed, which means they either have additional work to do on it or it was fixed coincidentally as a result of some other change. I will try to find out which. Edit: Changed my mind, this issue is fixed. If they have additional work to do, we don't need to track it with this bug report. I am resolving it as Fixed.
In the video you see what is happening. The player has glowstone in a dispenser, stands in front of it, activates the dispenser and the glowstone will end up in the players head slot. You can't add multiple and also doesn't show up visually.
