They have restocked. We waited for them to work and restock. It's still stuck like this. ONLY with tripwire hooks.
Just updated to 1.16.220 today and this bug still persists.
Here is a world download link to one of my earlier affected worlds. I hope this helps in some way. This is by far one of the WORST bugs I've ever come across in a game. This is truly game breaking. Anyway I saved in one of the worst affected areas. We were building a base out near the mansion in a village and we came back to it and there were massive holes in the village!
A thing to note is that this happened after my computer had a power loss while we were playing and the auto-save icon was flashing. Any sort of game/computer crash or power loss seems to cause this issue. This makes me question the point of the "auto-save" feature if it doesn't seem to work. I've never seen game files just blow up and delete themselves this severely.

Actually reading the issue with that bug in MCPE-60856, that user is describing a slightly different issue and cause for the crash. Could be related or unrelated possibly. I'm able to reproduce the problem in a different way than described by that user.
Can confirm this is happening in 1.16.40 too. We’re having a problem with players on my server going through the Nether portal only have it blown up from a creeper. Players are stating this happens every day. The portal is surrounded by an enclosed structure on both the Overworld and Nether side. It’s spammed with torches and flow stone yet they’re still spawning in the portal.

I can confirm this is still occurring frequently in 1.16.40, three of us on my LAN game raided end cities for about two hours. My friend ended up in a wall when he threw an ender pearl at a wall onto the ledge of an end city. I ended up in a wall twice during our raids. It seems to only happen if the pearl is thrown at a wall and ledge that are close together or where a wall meets a floor of some kind. I hope this helps narrow down the bug. Working on recreating and catching it on video.
I can confirm what Larry M Barthel Said, none of my villages or my iron farm were spawning Iron Golems anymore. Go around and break ALL your villager worksite blocks and re-place them. Iron Golems immediately started spawning again! This happened right after the 1.16.20 patch, mildly annoying but it's an easy fix.
UPDATE: I THOUGHT this was a fix. Turns out it didn't do anything. It fixed my iron farm but my villages are not spawning golems. I've checked caves under ground, destroyed all the beds and worksite blocks and replaced, still no golems spawning. There are over 30 villagers and worksite blocks in the village, and a few less beds.
I'm having this same issue. After playing for about an hour or so, NO mobs spawn anymore. It completely breaks the game. It's been going on since at least 1.14.30 when I started playing this game in February. It seems to be on multiplayer/LAN games and when players spread out the mob spawning completely breaks. NO hostile mobs, no passive mobs, can't find cows, pigs, etc for food and can't hunt hostile mobs at night because they don't spawn. Restarting the game SOMETIMES fixes the issues but not all the time. Difficulty doesn't make a difference. Switching back and forth from peaceful to a difficulty doesn't help either. MCPE-85754
I can confirm this. This has been wreaking havoc on my SMP's villager trading hall. We lost half of our name tagged villagers in one crash alone. Weeks of work instantly gone.
NOTE: This is NOT using the alpha server hosting software this is a regular game client from the Microsoft store where I leave an account to run as an open LAN/game server. Issues started after the implementation of the render dragon engine around the 1.16.200 update.
