I believe all aspects of this post are now in their own tickets, either by me or in already existing tickets.
I will try to segment this into separate tickets. If you want to do this as well AgentM (or anyone else), check how much of it I have done.
This has been resolved as duplicate by the bot, but the comment it probably based its conclusion on is just relating it to a previous fixed bug, while this bug is still present.

I have no custom resource packs enabled.
I found that resetting the language, then immediately typing every letter (upper and lowercase) in the chat bar/similar seems to stop any letters from disappearing. Maybe the issue is the nth character loaded, or similar.
