This isn't a Minecraft bug, rather a keybind on the Acer Aspire. Try holding FN when pressing it, or find a way to change that key to not change brightness.
For me I went underwater with an elytra on, swam and somehow managed to swim under the blocks and pop up into them. After that I could freely move through them
It’s usually the servers issue. Sometimes, it can be your device. Any texture packs applied can occasionally cause rendering errors on servers. However, it looks like you don’t have texture packs so it could just be the server. Also, what server are you on?

Also LateLag, it doesn't entirely accurate. MCPE-109925 says swimming cancels it. It does not.

This happened to me a while back, however restarting the game usually fixes it. Or if that doesn’t work, restart the whole console.
