This behavior needed to be considered in more detail, so I used a second account, because without it I would not have been able to see what the wolf would do when he attacks the Warden and during this I log out of the server. As it is, I have fully studied and understood this behavior - when I am online, the wolf will attack the Warden until either the wolf kills him or I imprison him. If I log out of the server while the wolf is attacking the Warden, the wolf just automatically sits down and stops attacking the Warden. Well, in principle, this is logical, because if I am the owner of this wolf and I beat the Warden and he attacks him, and then the owner of this wolf, i.e. I log off the server, the wolf no longer performs any actions, because his master is not online, and without him the wolf cannot do everything that He wants to.
Try removing all the modifications and resource packs, and this should solve your problem.

Now I've tried to reproduce this on the new version 26.1 Pre-Release 2, and already in this version I couldn't make the creaking look like it was dying. I did the same thing as in that video, and after I resumed the gameplay, the creaking just continued to fall on its side and then disappeared.
