However, this issue is Invalid.
Your game, launcher or server is modified.
If you can reproduce the issue in a vanilla environment, please recreate the issue.
Any non-standard client/server/launcher build needs to be taken up with the appropriate team, not Mojang.
A world which had previously been opened with a modified client might be corrupted. Please try reproducing the issue in a newly generated world.
Any plugin issues need to be addressed to the creator of the plugin or resource pack.
If you have problems on large servers like Hypixel, please contact them first as they run modified server software.

Upgrading from snapshots is not always supported. Resolving as a duplicate of MC-270325, see the comments there.
The issue with the signs has not been covered by that bug report. You could create a new bug report for that, but I'd expect the resolution and reasoning to be exactly the same.

I've reopened this because dots are now considered a delimiter as of 24w09a. Not sure if Mojang's decision from back then still stands, for that reason.
Is this issue exclusive to the Minecart experiment or does this also happen with the experiment disabled?
