Using updated 1.11.0 bedrock version my villagers now don't show the "trade" icon/dialog at all. Appears to be similar behaviour in my creative world if I spawn villagers, still no trade icon or dialog.
Icon and dialog appear when creating brand new world.

Same issue here.
We had a villager trading hall and I went to go see how the update affected things (I knew it would be significant). When I got there I found out that all 11 or 12 villagers wouldn't trade any longer. They converted into their new skin but clicking on them does nothing. No dialog box, nothing.
In creative I had a bunch of villagers in a test world all huddled together that got converted with the update and had the same issue as well - no trading dialog box. New villagers created through a spawn egg would trade though. Also, if I put down beds and profession-related blocks next to the originally converted villagers, they would change careers and then I'd be able to trade with them.

This only happens in certain villages. I have visited 13 villages in my world, and this only happened in the oldest one. The one farmer there retained its profession, the 6 other villagers became unemployed. They included 2 clerics, a tool smith, a librarian, a leatherworker, and a butcher.
The unresponsive villagers won't open the trade UI because they're unemployed, and therefore have no trades. You need to give them beds and job site blocks. However, there are several catches you need to know:
A villager will not necessarily claim a bed or job site block you place near it. There's a list of villagers who have dibs, and they go in order. The list gets shuffled in certain circumstances, but will usually remain stable within one play session. So the point is, you may have to place a lot of beds and job site blocks before a particular villager gets his turn to claim them. (Note that the claiming works independently for beds and job sites.)
Villages are no longer limited to the size they used to be. If you have villagers who used to be out of range, they may be in range now and become part of the village. These villagers will often claim blocks ahead of one who is actually in the village, which makes it look to you like it was claimed (green particles over the block) but not by any of the villagers (none of the nearby ones show green particles). You have to just place enough blocks for them to get their turns.
In converted villages, stray cats can also claim beds: See MCPE-44299. This confuses everything because the dibs list for beds becomes different from the one for job site blocks. To simplify it, kill all the cats you can find within range of the village. More will respawn, but I don't think those can claim beds.
In my case, I had a villager trading hall and a villager breeder about 120 blocks from the village. In 1.10 they were out of range. In 1.11 the villagers in them all became unemployed members of the village. When I was placing beds and job site blocks, they were claiming some of them, and gaining professions and trades.

In my case there are no other villagers for at least 500 blocks, more by taxicab...they are Ali walled into an approximate 4 chunk space so no far from beds.
I have placed approx single chest full of beds, which is approximately enough so that should have left only a few, if any, homeless...
I'll experiment with additional trade blocks. But I had some good trades which I'll certainly lose if I have to do that for all of them. That approach in essence is the same as simply killing them though...

I previously created my own village (in 1.10) with villagers having assigned professions. After converting to 1.11, all the villagers became unemployed but their level badges still reflect the level their previously assigned profession gained.
Trying to give them their previously assigned profession by putting job site blocks near them will not work consistently as it may claim by a different villager (with a previously assigned profession that's different) in another part of the village. This is true as well when trying to get the villagers to claim a nearby bed.
Also, even if you happen to convert the villager to its previously assigned profession, its trades will not be the same as it had prior to 1.11. For example, I had a librarian who had a mending book in 1.10. He became unemployed after the 1.11 conversion. So when I tried converting him to his old profession (which took multiple tries as it keeps being claimed by a faraway villager who even had a different profession before), he didn't have the mending book anymore even though he still retained his master level badge from the prior version.
Keep in mind that I removed any other beds, job site blocks as well as villagers within the radius of the village.

I don't think the radius of the village has any affect on which villagers claim beds and blocks. My experiments reveal that any villager in the player's ticking area can detect any village in that area and join it, no matter how far away it is. It then becomes eligible to claim beds and blocks within the village. It will also start trying to run toward the village if it can, or will pace frantically if it can't.
As I mentioned above, the order that villagers go in when trying to claim beds and workplace blocks is somewhat stable but can change under certain circumstances. One of those circumstances is a new villager joining the village. It won't change the order every time, but there's a chance of it happening, and when it does happen the new order is basically a random shuffle, so the new villager could enter the queue ahead of villagers that already lived there but didn't have beds or workplace blocks yet.

Greetings. I opened a bug related to this one, here: MCPE-45275. But please note that I'm addressing the lack of support to "legacy" villagers, wich lost their previous professions and trades. IMHO, the game should keep them as "legacy" villagers, not forcing them to the new bed/profession block restraints, and thus preserving the economy and mechanics of older worlds.

I noticed that my trading hall (screenshot given) lost its function.
I‘m worried that my librarians lost their trades, but can not confirm it yet, like Arnold did above. I guess I have to craft some beds.🙂
Well, I’m a little bit disappointed. If I had the knowledge beforehand... I had a stockpile of books by now. Well, rebuilding after a major update is kind of fun and challenging. But losing beloved villagers after hours and hours of breeding... A shame.

All converted villagers lose their trades. This is unavoidable because of incompatibilities with how the new trading system works. I know that's disappointing, but you'll soon find out it's not nearly as big a problem as you think it is. (It's a lot easier now to get the villagers you want with the trades you want...but I'll leave it up to you to discover how, because figuring it out is part of the fun.)

Given sample of my villagers new trades by providing mire workstations . This works although they are not retaining their previous trading experience/tier. Starting new team from scratch fairly tedious with new model. Librarian books show obscure marks instead of what their enchantments even when unlocked (not sure if this is intended yet) which really means I can't have a village but will be forced into making a trading hall which is disappointing. I enjoyed thm bustling around as a village. May be bad luck but their prices are now outrageous too...

This bug is still unresolved even after the 1.11.1 hotfix.
