@@unknown , in fact it is reproductible, but happens on random line breaks over the text. It is easier to verify on books & quills with many pages, because they would have more text.
By the way, now (1.17.40) we have another bug on top of that, making text in signs and books disappearing or not saving... refer to MCPE-146229, REALMS-9191, REALMS-9223 and REALMS-9231.

Looks like MCPE-21416 for me, too. The mods and the Bedrock/Realms QA team have accepted that MCPE-21416 occurs with any mob and entity possible, in any situation (crossing chunk borders or not, named or interacted in any form), and it got even worse after 1.17.30 for some reason. Make backups often, and check your valuable entities for missing ones always.
I also have the impression it doesn't depend on the text input, because it happens randomly. Looks like some faulty memory management, or maybe related to the also faulty anti-swear filter (wich removes/replaces random words and characters – maybe there are line breaks in profanity_filter.wlist?).
Can confirm it's still broken in 1.17.32. Just tested it on my book & quill, wich you can see here:

As I said before, it's a long book (35 pg), originated from a UTF8 txt file, via copy and paste directly in the book UI.
Something I didn't noticed before: sometimes you succesfully corrects the line breaks in a page, but them the breaks in another page disappear.

Looks like everyone's most hated 4-year old bug, MCPE-21416, is plaguing your world.

@GoldenHelmet, the nearest village from our base (located at 150, -150) is in 168, 152. As I can remember, we spent 3 game sessions (circa 6h of playing) out of the village, maybe less, because my daughter is building a school for the villagers and spend more time there 🙂
We were inside our base, smelting ores, when outside appeared a patrol without a captain, just 2 illagers. Then, in the subsequent playing session, appeared just the captain. It was a looong time since we saw patrols, so I thought the bug was solved in 1.17.11.
Now I upgraded to .30, if more patrols appear I'll post here.
Replaces the word "por" with ### (Pt_BR). Maybe it confuses with "porn".

Where just the line break characters are being lost.
This is happening also in Books & Quills, please update the description. Verified on a Realm world, version 1.17.11, playing on Windows 10. The error occurs with a written Book & Quill with 29 pages. It has also color formatting, and the original text came via Ctrl-V from an UTF-8 notepad file.
As a Book & Quill text is editable, another effect is perceivable: trying to re-enter the line breaks manually,editing the book & quill, doesn´t work. If you closes the book and opens it again (reading on a Lectern or on hand), some of the line breaks are gone.
This bug is somewhat related to: MCPE-142864 Edited text in a book disapears.
Had this also in MCPE Android. The previous version (1.20.19) ran perfectly, this version is almost unplayable.
