Thank you for the elaboration. Note that in the previous comment by Tango, the bug shows arrows bouncing off which may be a different bug, or just how this bug works now in modern versions.
Yes, it still occurs.
This is a feature request. Also the iron nugget does not use the same palette as the others, which is an actual valid bug unlike the rest of this.
Cannot confirm. Crossbows do random damage between 7 and 11. With strength, it still never exceeds the 11 damage maximum.
Can confirm, the crafter’s clickable ui interface is being rendered on top of the items when it shouldn’t.
Can confirm. The block highlight appearing at all is likely the cause of this, as the highlight should not appear when spears cannot actually interact with blocks.

Redacting previous statement: this bug affects both players and mobs, it’s just that some of the featured Bedrock servers opt to fix it, giving the impression that it only affects mobs.
Can confirm, the visual attack recharge in the hand does not function.
This may be WAI, as the spear is specifically programmed to not be able to interact with any entities if the user is within 2 blocks of them, not just unable to attack those entities.

What it would look like if the component were fixed to display the difference between spears and other weapons:
This is likely WAI, as sprint-knockback attacks function the same way, and since spears cannot do sprint-knockback attacks they’ve applied this functionality to charge attacks instead.
You’re likely experiencing this because you’re hitting multiple mobs at once, which plays the spear attack connection sound for each mob hit.
Dealing knockback is still connecting with the weapon, so durability being consumed should be expected.
Works as intended, mainhand right click functions take priority over offhand ones should both the offhand and mainhand items have right click functions.
Pickaxe mining level stat*
Likely relates to MC-304733.
