Steps to reproduce:
Set difficulty to hard
Spawn a villager and a zombie
Let the zombie kill the villager
Expected results:
Villager turns into a zombie villager, but still retaining their profession/career skin and the badge.
Observed results:
Villager turns into an unemployed zombie villager.

This is an intentional feature. The new zombie villagers have not been fully implemented yet and will lose their professions if killed by zombies. Like what smokeycheese13 stated you can tell it is not complete because when hurting the new zombie villagers it makes a similar sound to when hurting a player. And to anyone else reading this, be extremely careful to your villagers. If they convert to zombie villagers they will lose their trades forever.
You are mistaken, my friend. Anything and everything I claim in any bug report has been directly mentioned in the changelog, or from personal experience. This is both. When I updated I had the same problem you had until seconds later I realized that the reason why they've become unemployed is because of this:
Villagers in existing worlds now convert to new Villagers (if they are not part of a marketplace template world)
Various Villager bug fixes and changes:
Farmers choose their profession based on composter blocks rather than farmland blocks
Farmers and Librarians properly go to work
Work goal is properly cleaned up between schedule changes
Fixed work goal to have a cooldown, max active time, and better ranges
Fixed preferred job sites being lost after reloading worlds
Increased job site goal distances

The Supply of trades is only restored when the Villager is given the opportunity to work at their Work Station. (This feature is not complete in this beta, but villagers can access a resupply using the command /resupply)
When the Villager's trades are restored to full, it takes whatever Supply was used up (number of trades), and converts that into a price increase called Demand. Demand goes up by the number of Supply used, and down by the number of Supply not used
When villagers make trades, they gain experience. When they gain enough experience, they level up. Levelling up unlocks new trades, which are locked until the Villager is at the appropriate level (currently one trade equals one level up, this will be changed in a future update)
The economy system is still in development and more features and changes will be added later on
So, therefore, I needed to resupply my villagers by allowing access to their work stations, otherwise, they would empty from supplies.
And there were no job sites anywhere, so I handcrafted my own and it worked! This has nothing to do to fix Zombie villagers though. This is why I am claiming that this is no bug but intentional.

The new Zombie Villager models have not been fully added. You can tell this is true because when these new zombie villagers are hit, they do not make the hurt sounds that they would usually make.
