I can confirm this is still an issue.
Though that is a useful tip, often it is impossible and mostly pointless to contain a minecart to a 16x16 square. However I find my carts/entities disappear on chunk loading (or perhaps unloading) seems the game currently handles the chunk loading badly. Even the order things are loaded, entities first then the blocks. Sort of makes hidden treasure chest pointless since all we have to do is quite the game and reload to see where the chest is before the blocks appear.
Synching has never worked for me on any world, I always get the error message that the other console is taking to long to synch. I never had any issues on xbox one edition.
unfortunately it's unlikely that a bug fix will recover any world lost to the bug. Sorry.
No, it just another one of the many bugs in this game. It corrupted my friends world and it was only a few megabytes. So to me it seems like size is not a factor. Just bad code somewhere.
I just had the same thing happen to me, the world is 500MB but the save reduced to 288MB and on next attempt of loading the game just crashes to the dashboard.
There is something bad happening with game saves, A friend of mine lost his entire world because of this, People put so much work into there worlds I hope Mojang jump on this and fix it fast.
Fortunately for me Im working of a copy of my realm, but my friend lost everything.

Rain fog should never appear in caves or any enclosed space. Just lazy coding to apply an engine performance feature globally like this..
I find minecarts stuck on powered rails too. But the despawning is the most frustrating issue and I cant find any comment that they are doing anything about it. And its not just mine carts is seams to affect all entities that have space to move, I lose villagers in crop farms, horses too. every release I hope this is fixed but it never is.
@ Mark B, I had about 300 spawning spaces available about half way up the height of where the monument used to be.
@Gabriel. When I looked at my world in creative I flew around the ocean and did notice 100s of Squid in large clumps surrounding the monument space. So you may have a point.
I did some testing and discovered they will spawn if there are only air blocks above the water.
I am having this issue too. Seems that the village mechanics are not operating in parity with the java version. I think that village census is not being calculating correctly.
I'm having the same issue on my realm. A working 1.2.5 Guardian farm no longer spawns Guardians after the 1.2.6 update.
Observers still not detecting Redstone Ore activation on 1.2.5. Why no fix yet? this was reported a year ago!
still happens on xbox on 1.2.5, I keep loosing chickens out of blocked pen, and villagers in an iron farm. The all randomly spawn outside of there holding area on a chunk load. This happen intermittently and I can go a few days. Then one day I will load a world or re-enter the area and they entities will all be free.
This issue affects almost all processed items in the game. Seems the lazy chunks are not implemented correctly as they should buffer any output from an active chunk so that all variables are set correctly prior to the lazy chunk becoming active.
I would also like to see this removed. It seems the disappearing mine cart bug has been around for more than a year. And I keep loosing villagers out of the iron farm. Two very frustrating issues.
Gosh, this has been open for a year. Please fix it. it's costing me a small fortune in iron. Every time I load the game, the minecarts are gone and I have to craft more.

This is a very frustrating bug.
Not sure why this is marked as resolved as I have just tested on xbox one version of bedrock v1.2.3 and the issue is still present. The pigmen spawn and immediately despawn.
Yeah I can confirm the issue is still present. Been hopping to get my melon/pumpkin farm working for 2 years now!
