Attached 4 more videos, 3 from the current beta (1.16.210.56) - None of the Experimental Toggles are used - and 1 from a previous beta where both block placing / breaking perfectly kept up with the player's speed.
Steps to Reproduce
While flying, try to place blocks in a straight line
Expected Results
The player would continuously place blocks for an indeterminate amount of time as block placing speed matches the player speed
Observed results
Block placing ceases after a few blocks placed
Delay is significantly worse in 1.16.210.56. It now takes on average 3-4 frames for particles to appear (Windows 10 singleplayer, it is worse on other platforms), and block breaking in creative is also affected.
Can confirm
The problem here is that Nvidia's resource packs are greatly lacking for anything but HD showcase

[media]I'll be entirely honest about this, I can't wrap my mind around how this new achievement screen was handled. Instead of adding this new screen to all beta users they decided to only send it to a select few for no good reason. I remember seeing it back in August in a screenshot and that was the last time I ever saw it

This didn't happen to me in the previous beta so it seems it's a more widespread issue now
It seems this is the same bug as MCPE-37789. As long as the mob is moving at the time of death it'll slide along the ground in the same direction. Because cows run away from the player after being hit, even in creative, it makes it easier to reproduce the bug using them. In survival hostile mobs will slide towards you while in the dying state
Also affects charged creepers
Agreed, it is a needed quality of life feature
Seems fixed in 1.16.210.59. Props to the devs for fixing it this quickly
