Maybe try to reduce the amount of packs (resource and behavior) you have in the game folders too?
I know this isn't a practical solution, but a temporary workaround until proper support for android 11 gets implemented.
I think this has something to do with android 11 scoped storage.
My brother has 36 worlds so minecraft takes a few minutes to open for him, I have much less (12 worlds) on my phone so it opens faster (less than a minute). We both run android 11.
Maybe consider moving some of your worlds out of minecraftWorlds folder and see if things improve.
Same happens with me on windows 10, for example I have a fully customised steve that defaults back to the default steve anytime I use a resource pack that affects the player. In my case it was a damage indicator resource pack.

Ever since I updated to version 1.16.200 on windows 10 the game performance degraded significally. Chunks are taking longer to load than what it used to be in 1.16.40 (I didn't try on 1.16.100). Other problem include:
-Unhabitual frame drops even at 16 chunks of render distance compared to steady 60 fps on 32 chunks of render distance on 1.16.40 . (Laptop specs: 8GB DDR4 2400, i7-8565U, Nvidia geforce MX130 2GB with latest driver from Nvidia)
-Weird white lines with anti aliasing enabled.
-Some repeating command blocks are stalling when I load the world,some working faster than they should and others not working at all until I "restart" them. I don't know if this issue of the command blocks is related to render dragon or not, so I am hesitating to open a ticket for it
On my phone (galaxy A50,android 10) the game is still as good as it was pre 1.16.200.

I think you have to build an artificial village with beds, doors and a bell and you will see your iron golem leaving...
What is your device? Maube it hasn't enough processing power. Mine doesn't lag during raid.

I believe it is a bug since what I built is considered a village by the game, if I enter with bad omen a raid starts, which only could happen if it is a village.
Ok I was annoyed that the fix were not in 1.11

Same here,2 villagers died during raid, just because they were too dumb to run in their houses.
I can confirm the issue, whenever the wifi connection gets unstable the game lags even when playing on LAN.
I used to play with my friends using an old router to get the LAN connection, but the lag is way very annoying.
Also, if we played on a hotspot for example that has a stable connection to the internet everything works, once the connection drops the game lags. I am using an android 11 device.
Edit: It affects the 1.17.11.01
