Not sure if this is actually reproducing the bug, or if its just missed input, but this footage does seem strange:
Lunging while standing on the ground or only jumping and lunging does not seem to give the same result
Since snapshot 25w31a (1.21.9), the debug screen is accessible from everywhere in the game. This is intentional.

(Also fyi, you can put chests in chests. Only shulker boxes are not allowed inside shulker boxes.)
This is intentional, adventure mode doesn’t allow mining and placing blocks.
What you are thinking of is most likely Survival mode.
There is no such thing as Polished Nether Bricks in vanilla Minecraft, did you disable a mod or datapack?
The F3 screen now shows anywhere, not just while in a game world. This is not a bug.
Also, please always test with vanilla versions.

I’m not exactly sure how Mojang will handle this, but I think there is a high possibility that this will be resolved as Invalid.

Are you clicking with Control at the same time? If so, this is a duplicate of MC-59810.
Please make sure Reduced Debug Info in Chat Settings is also turned off.

Interestingly, the item position does change, but not in an intended way.
Shearable items are controlled via the #shearable_from_copper_golem item tag. You have to add the items to this tag for it to work.
This happens with all items that slow down your attack speed.
Try hitting F3+B to see the player’s hitbox.
That block is minecraft:wall_torch, not torch.
Unable to reproduce in vanilla 1.21.11, however this seems like a known Iris issue. Try disabling the Iris mod entirely.
